Well, I reckon I got a real simple recipe here for you, a lazy day peach cobbler. Now, don’t go thinkin’ it’s somethin’ fancy, cause it’s just what it says—a lazy way to make a good ol’ peach cobbler when you ain’t got the energy to mess around too much. But it’ll sure fill your belly, I tell ya that much!
Now, let’s start with the peaches. You can use fresh peaches if you got ’em, but I usually just go with frozen ones. No need to thaw ‘em out, just toss ‘em right in frozen, just like that. Makes things quicker, and I don’t see no reason to fuss with it. If you wanna be real fancy, I guess you could peel ‘em and slice ‘em, but I never bothered with all that. You just put your peaches in a big ol’ bowl, and we’ll move on to the next step.
For the cobbler part, you gotta have some muffin mix. I like to use oatmeal muffin mix, cause it gives it a nice little texture. You just throw that in a bowl. Then, grab yourself some nutmeg and cinnamon. Don’t be shy with that cinnamon, it makes everything smell so good while it’s bakin’. Mix that all up real good with a spoon, or if you’re feelin’ fancy, use a whisk. Now, the trick to gettin’ that cobbler topping just right is the butter. You’ll need about a half cup of butter, and you gotta cut it in. I just use a pastry cutter, but if you ain’t got one of those, you can use a fork or even your hands, just make sure it gets all crumbly like. Looks like a mess, but that’s what you want. Set that aside.
Next thing you wanna do is get a big ol’ baking dish. I usually use a 9×13-inch one, but whatever size you got works. Take those frozen peaches and dump ‘em in the dish. You don’t need to add much to ‘em, maybe a little sugar if they ain’t too sweet already, but that’s about it. Then, take your oat mix and sprinkle it over the peaches. Now, don’t be too neat about it, just cover ’em up as best as you can. Don’t worry if it don’t look perfect, it’ll all come together in the oven.
Now, here comes the easy part: bakin’ it. Preheat your oven to 350°F (that’s about 175°C, I reckon), and stick that dish in the oven for about 45 minutes. You’ll know it’s done when the top is golden brown, and when you poke a fork in it, it comes out clean. Don’t be worried if the peaches start bubble up around the edges, that’s just part of the magic.
When it comes outta the oven, let it cool for just a bit before you dig in. If you can hold off, it’s even better after sittin’ for a while. But I ain’t gonna lie, I usually can’t wait too long. It’s best served warm, and if you’re feelin’ real fancy, throw a scoop of ice cream or a dollop of whipped cream on top. But even without that, it’s mighty good just as is.
Now, don’t get all worried about what’s what. Some folks might call this a peach crumble or somethin’, but to me, it’s just a peach cobbler. I’ve heard people talk about cobblers with biscuit tops and all that, but to me, this lazy version is just right. You ain’t gotta worry about pie crusts or any of that other nonsense. A cobbler’s supposed to be easy, and this one sure is!
